Remove stale alpha labels from Markdown and Highlight across the site and their introduction post, and use their published 1.0.0 packages in the site and builder.

Markdown, Highlight, and Charts all expose v1 as Latest and serve the main docs branch. Extend version coverage to Charts and verify retired v0 and numbered v1 docs URLs redirect to latest while preserving paths and query strings.

Validation: pnpm test; Chrome verified all three rendered landing pages have no alpha or beta labels and their v1 Latest pickers open and select correctly. All three libraries passed live v0/v1 docs redirect and latest docs checks.
